Chaga Mushroom Gravy

Bursting with umami, vitamins, minerals, and antioxidants! This chaga mushroom gravy adds variety to your side dishes and main courses.
Uses chaga broth. See our chaga broth recipe if you haven't made it yet.
1 cup chaga broth
100g cremini mushrooms
3 tablespoons butter
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons heavy cream
1. Prepare the mushrooms by trimming their stems and quartering them.
2. Melt 1 tablespoon of butter in a frying pan at medium heat. Add the mushrooms and half a teaspoon of salt. Sauté for 4-5 minutes. Remove the mushrooms and set them aside.
3. Melt another tablespoon of butter at medium heat and add the cornstarch. Stir until it dissolves. Add your chaga broth, followed by the cream and salt. Stir often to thicken up the gravy as it simmers. Add the sautéed mushrooms and stir for 1 more minute.
4. Turn off the heat, add the last tablespoon of butter, and stir until it melts.
