Choco Chaga Date Paste

Spread it on toast, dip fresh fruits into it, stir it into milk for a quick hot chocolate. What else can you use this versatile paste on?

Keeps in the refrigerator for up to 2 weeks.

1 cup dates
375ml water + 2g instant chaga
6 tablespoons cocoa powder
1 teaspoon vanilla extract
4oz bittersweet chocolate
A pinch of salt


1. Put the water, dates and instant chaga in a blender. Blend until smooth and syrupy.
2. Transfer your chaga date syrup into a small saucepan and add the cocoa powder. Stir frequently over medium heat until the cocoa powder dissolves. Continue stirring and remove from heat once the syrup starts simmering.
3. Chop up the chocolate and add it to the syrup along with the vanilla extract. Whisk until you reach the consistency of fudge sauce.
4. Transfer your choco chaga date paste into a container with a lid. Press a layer of plastic wrap on it before screwing the lid on to prevent a skin from forming, and refrigerate it until it thickens.
