Mini Banana Chaga Pancakes

Although they're small, these pancakes pack a nutritional punch that's anything but miniature, stacking up the earthy chaga taste, delicate nutty flavours, and a fluffy mouthfeel.

4 eggs
1 banana
1/2 teaspoon "Instant Chaga"
1/2 teaspoon baking soda
2 tablespoons coconut flour
1 and 1/2 cups hazelnut flour
1 teaspoon vanilla extract
1/4 cup coconut milk

1. In a large bowl, mix the eggs, coconut milk, and vanilla extract. Mash the banana into the mix and fold it in. Add the coconut flour, hazelnut flour, Instant Chaga, and baking soda. Mix until there are few lumps left.
2. Coat a large frying pan with oil over medium heat. Spoon 1/4 cup of the pancake mix into the pan. Place as many as you can while leaving room for flipping. Cook for 2-3 minutes on one side, and then flip and cook for another minute.
3. Drizzle and decorate the finished pancakes with your choice of syrup and toppings like fresh blueberries or crushed nuts.
